Don't they make you curious?
This is what I learned about Chia Seeds
- Good source of omega fatty acids
- An easy to digest form of protein full of minerals
- Full of vitamins
- Great source of Fiber
- Increased energy
- They are super absorbent and the develop a gelatinous texture when they are soaked in liquid. It's like a science project!!!
Last weekend after hanging with my super healthy friend Brooke, she turned me onto this yummy dessert recipe so I wanted to share it with you! (She is the epitome of cool, I aspire to be like her so I do things like buy her car and copy her recipes...) If you doubt my recipe skills just go look on the Whole Foods website, that's where this one can be found.
Ingredients
- 2/3 cup chia seeds
- 2 cups unsweetened soymilk, almondmilk or ricemilk
- 1/2 teaspoon pure vanilla extract
Instructions
- Combine chia seeds, almond milk and vanilla in a a container with a lid.
- Tighten the lid and shake well to mix the ingredients together (You could just stir together seeds, almond milk and vanilla in a bowl.)
- Refrigerate overnight.
- Stir it one last time before you serve it.
- Spoon the pudding into bowls.
- Garnish it with your favorite fruit for some added flair.
Ta-dahhhh! Pudding. It's the most effortless thing ever.
